We also empathize with the challenges that families face (caring for children or elderly adults, busy schedules, etc), and work with you to provide practical solutions to achieve healthier eating habits.
Chelsea Crawford is a Registered Dietitian and proud owner of Fuel For Life, LLC. She started her career in a Children’s hospital managing tube feedings, pre-diabetes, diabetes, picky eating and rare genetic disorders. She then went on to manage a teaching kitchen at the YMCA where she taught families how to prepare healthy, flavorful meals. At that time she also offered counseling services for weight loss, healthy eating, diabetes, heart disease, and child nutrition.
After seeing much success in her clients attaining their goals, she wanted to be able to help more people by offering affordable nutrition counseling through insurance. Therefore, in 2019 she created her business, Fuel For Life, LLC.
Chelsea is well-versed in nutrition for both the pediatric and adult population. Most of her clients seek her out for healthy weight loss, chronic disease management, and support with their child’s nutrition.
Her philosophy: “All foods fit-even when your goal is weight loss but this does mean we have to find the right balance of nutrient dense foods in the diet too. Anyone can love a meal packed with veggies as much pizza, tacos, and a burger- it’s all about how they’re prepared and what they are paired with.”
Fun Fact: Chelsea loves traveling where she spends her time enjoying beautiful landscapes and seeing wild animals in their own environment.

Nicole Eichinger is a Registered and Licensed Dietitian in Texas. She started her career as a NICU/Pediatric Dietitian and absolutely loved it. However, after having her own babies with her husband, Alex, she transitioned to a part time job working in dialysis. She specialized in peritoneal dialysis for many years, as well as home hemo-dialysis.
Nicole transitioned to working for herself at Nutrition’s My Life and started to specialize in thyroid disorders, PCOS, and digestive health. Nicole understands what it’s like to be a health warrior. She had half her thyroid removed at the age of 20, has PCOS, and migraines since the age of 12. She now thrives at helping people like herself, a health warrior, improve their health conditions and feel like themselves again. She wrote the book, The Healthy Thyroid Guide, in 2021 and now loves teaching people how important eating for your health conditions can help you be the best version of yourself.
She is so excited to be a part of the Fuel For Life, LLC team and be able to help so many more people here in San Antonio. Nicole will help empower you with the knowledge to help reach your nutrition and health goals.

Simone Weingarten is certified as an Eating Disorder Specialist with the International Association of Eating Disorder Professionals. She helps people learn what works for their bodies to be healthy and confident, as well as learning that nutrition is more than just basic food skills – it can be incorporated into medical nutrition therapy, performance, and lifestyle.
Before Simone got into the field of dietetics, she struggled with the diet culture belief that being “skinny” would lead to happiness. When that didn’t work out, Simone knew her goals needed to change. She wanted to be STRONG, FIT, HEALTHY, and HAPPY! She did research on nutrition and exercise which helped change her life for the better! She helped family and friends learn why fad diets didn’t work, became a certified personal trainer, and created and managed her own fitness business, Simone Ashley Fitness. This was also when Simone started her journey to becoming a Registered Dietitian!
Simone states, “I’m an ’anti-diet and intuitive eating dietitian because I personally struggled as an athlete with eating disorders and diet culture! I missed out on many things because of dieting, and this inspires me every day to show others they don’t have to miss out on things in life either!”
Patty Le is a Registered Dietitian with 10 years of experience providing nutrition care to pediatric patients. She earned her Bachelor of Science in Dietetics from Purdue University and completed her dietetic internship at the University of California, San Francisco Medical Center. She is a board certified Specialist in Pediatric Nutrition and has expertise in many areas of pediatric nutrition including weight management, food allergies, picky eaters, failure to thrive, tube feedings, inflammatory bowel disease, and diabetes. She is passionate about providing personalized, quality care to families with complex nutritional challenges.
Outside of work, Patty enjoys spending time with her family, walking her dogs, running, reading, baking, and cake decorating. She is also an active volunteer, devoting her time to being a Girl Scout troop leader and participating as a board member for her local school PTA.
Amber Ketchum is a Registered Dietitian from San Antonio, Texas. She has a Bachelor and Master’s Degree in Nutrition and has a passion for teaching healthy habits to people in all walks of life. She started out in a community setting teaching nutrition to people of all ages.
She then worked at a weight loss resort, where she worked with people from all over the world who came to participate in the weight loss and fitness program. Working there, she gained extensive experience planning menus, overseeing client meals, teaching multiple nutrition and healthy cooking classes each week, creating individualized nutrition plans, made several live TV appearances, wrote online nutrition articles, and did radio interviews. Since then she has worked in nutrition consulting, group education, healthy cooking classes, and has a nutrition blog at www.homemadenutrition.com.
Sarah, a highly experienced and licensed Registered Dietitian, is dedicated to helping you achieve your physical, emotional, mental, and spiritual wellness goals through both telehealth and in-person consultations. With a Master’s degree in Human Sciences from Texas A&M Kingsville and years of experience working with children and adults, Sarah is equipped to handle a variety of concerns including pre and post bariatric surgeries, diabetes management, enteral nutrition support, food-drug interactions, and chronic diseases such as heart disease, hypertension, gastrointestinal disorders, renal and hepatic disease and chronic pressure wounds.
Sarah has worked in various hospital settings including the number one trauma hospital with 368 beds, and Driscoll Children’s Hospital. She is experienced with stem cell or bone marrow transplant patients in oncology. She is also a certified insulin pump and CGM educator. She specializes in helping new moms with breastfeeding, as well as children and their parents with feeding, eating, and growth concerns.
