Homemade Hummus

4 Servings

Ingredients:

1 can Garbanzo beans

1 clove garlic -Chopped

3 Tbsps Tahini

3 Tbsps lemon juice

2 Tbsps Extra Virgin Olive Oil

Salt and Pepper to taste

Optional – Roasted Red Pepper, Sun Dried tomatoes w/ basil, Chili Chipoltle

lime (1 can chipoltle peppers + lime juice-sub for lemon juice), and chopped olives

Instructions:

Place all ingredients into blender

Blend until smooth

For other options place extra ingredients into blender and blend until smooth ,or add on top for garnish.

Egg Muffins

4 Servings

Ingredients:

6 Eggs lightly beaten

1 Red Bell Pepper (Diced)

1 Sweet onion (Diced)

1/2 cup Broccoli Florets (Par boil or steam first)

1 cup Spinach

1/2 cup Colby Jack cheese

Salt and Pepper to taste

Optional *- Add 1/4 cup Jalepenos

Instructions:

Place all ingredients into blender

Italian Tomato Cucumber Salad

Ingredients:

4 fresh Tomato (Cored and chopped ) or 1 pint cherry tomatoes (Cut in 1/2)

1/2 Red Onion (Thinly sliced)

1 large Cucumber (Chopped)

3 Tbsps Extra Virgin Olive Oil

1 Tbsp of fresh Oregano (Chopped)

Salt and Pepper to taste

Instructions:

Mix all ingredient together in a large mixing bowl

Let sit for 30 minutes to allow flavors to blend

Olive Oil & Herb

Bread Dip

Ingredients:

1/4 cup Extra Virgin Olive Oil

Dash of Rosemary

Dash of Thyme

Dash of Salt

Dash Pepper

Dash of Crushed Red Pepper

Dash of Garlic powder

Dash of Oregano

1 Tbsp Balsamic Vinegar

Bread, Toast, Biscotti, or Pita chips or bread

Instructions:

Mix all ingredient together in a small mixing bowl or serving dish

Let sit for 30 minutes to allow flavors to blend

Mediterranean Salmon

4 Servings

Ingredients:

1/2 cup Extra Virgin Olive Oil

1/4 cup Balsamic Vinegar

6 cloves of Garlic (Chopped)

4 3oz Salmon Fillets

1 Tbsp fresh Cilantro (Chopped)

1 Tbsp fresh Basil (Chopped)

Salt & Pepper to taste

Lemon slices

Instructions:

Mix olive oil and balsamic vinegar in a small mixing bowl

Arrange salmon fillets in shallow baking dish

Rub garlic on fillets, then pour olive oil and vinegar over the fillets, turning them once to coat

Season fillets with cilantro, basil, and salt and pepper

Allow fillets to marinate for atleast 10 minutes

Preheat oven broiler

Broil fillets for 15 minutes and turn once, or until brown on both sides and flaked. Brush fillets occasionally with sauce from pan

Garnish with lemon

Mixed Berry Overnight Oats

1 Serving

Ingredients:

1/2 cup steel cut oats

1/2 cup non-fat milk (or milk alternative)

1/2 cup non-fat plain Greek yogurt

1 cup of fresh mixed berries (Your choice! )

Instructions:

Add oats to container. Pour in milk. Layer yogurt then fruit. (You can do a
couple different layers).

Refrigerate overnight
